Join Us for a Feast at Isle Casino® Cape Girardeau

Tis the season for a holiday meal! Whether your party is large or small, we at Isle Casino® Cape Girardeau know that you want your celebration to be perfect. You've already picked the main course, but we all can agree that side dishes are just as important for a special feast.

There are so many options for additions on your meal. Let us ease your holiday stress by telling you about a few of our favorites. Simply follow these guidelines to create a holiday dinner that will delight your guests.

A great side or starter to your holiday meal is a nice, warm biscuit. Here's how to make them.

    Start to finish: 20 minutes
    Servings: 12

    2 cups buttermilk
    1 tablespoon baking powder
    1 tablespoon sugar
4 cups self-rising flour, with a bit extra for rolling
    3/4 cup vegetable shortening
Preheat the oven to 400 F. Grease a large baking sheet with cooking spray.
Combine flour, baking powder, and sugar in a large bowl. Mix well and cut shortening into your mix until you achieve a crumbly texture.
Use a 2-inch cookie cutter to make round biscuits and place them on your cooking sheet.
Bake 12-14 minutes until your biscuits are light gold in color. Serve warm with butter.

All of your guests will be sure to love a side of corn with their dinner. Here's what you need to create this fantastic dish in a slow cooker.

    Start to finish: 4+ hours
    Servings: 10

One 32-ounce bag of frozen whole kernel corn
    1/2 teaspoon salt
    2 tablespoons sugar
    1/4 cup water
    One 8-ounce package cream cheese
    1/2 cup butter
    One bag of bacon bits
Empty your bag of corn into a 4 or 5 quart slow cooker. Sprinkle corn with sugar and salt and drizzle with water. Place cream cheese and butter on top without stirring your corn mixture.
Cover and cook on low for four hours. Stir well before serving, your cream cheese may still look like a block but is very blendable. Add bacon to the top.

Meat and potatoes have always been the American way. Indulge your guests with this simple recipe.

    Start to finish: 40 minutes
    Servings: 5

2 1/2 pounds peeled and chunked Idaho baking potatoes
    1/2 stick of softened butter
    1/3 cup milk
    1 teaspoon salt
    1/4 teaspoon black pepper
Put your potato chunks into a large soup pot. Add just enough water to cover the potatoes and bring to a boil over high heat.
Cook 15-20 minutes until tender. Drain water and place potatoes into a large bowl.
Add the remaining ingredients and mix well with a spoon or electric mixer until smooth and creamy.
Serve with butter, gravy, or sour cream.

Arguably the most popular side dish, stuffing can be made easily with fresh ingredients.

    Start to finish: one hour
    Servings: 6

    3 tablespoons olive oil
    1 medium sized chopped onion
    1/4 pound chopped mushrooms
    1/3 cup slivered blanched almonds
    1/2 cup dried cranberries
    1/4 teaspoon salt
    1/4 teaspoon ground ginger
    1 3/4 cups chicken broth
One 8-ounce package seasoned stuffing cubes
Preheat the oven to 350 F. Coat a 1 quart baking dish with cooking spray.
Heat oil over medium-high heat in a large skillet. Add onion, mushrooms, almonds, cranberries, salt, and ginger and sauté for 6-8 minutes.
Add chicken broth and bring your mixture to a boil.
Remove your mixture and add stuffing cubes. Mix well and place in baking dish. Bake for 30 minutes.

Cranberry sauce is a sweet treat that brings out the essence of the holidays. This simple recipe is great for your feast.

Preheat oven to 350 degrees. Combine your ingredients in a 1 1/2 quart casserole dish.
